Rainbow Cupcakes

I ABSOULETLY LOVE MAKING THESE!!
I've made them atleast 5 different times ;)
They are easy and fun to make (lots of dishes to clean..) but FUN and easyy!

All you need:
White cake box mix
Primary color gel

Directions:
Mix box cake as directed, take about 1/3 cup and place in bowl, repeat 5 more times. Add food coloring, and done!



Just plop down the colored cake mixed DON'T MIX COLORS!






Oreo Stuffed Chocolate Chip Cookies

OREO STUFFED CHOCOCHIP COOKIES!
It's a chocolate chip cookie with a twist!! Try the cookie warm with ice cream!



Ingredients:
- 2 sticks softened butter
- 3/4 cup packed light brown sugar
- 2 large eggs
- 1 cup sugar
- 1 TBL vanilla
- 3 1/2 cups flour
- 1 tsp salt
- 1 tsp bkg soda
- 10oz chocolate chips
- Double stuff Oreos

-Preheat oven to 350 degrees.
-In separate bowl mix flour, salt and baking soda
-Slowly add wet ingredients and chocolate chips
-Take ball of dough and put on the top of the cookie, do the same with the bottom, seal edges together by pressing in hand until the oreo is enclosed
-Place on parchment paper and bake 10-13 minutes
-Let cool for at least 5 minutes and enjoy! (REMEMBER THE ICE CREAM!)

Peanut Butter Cup Cupcakes

One of my favorites is peanut butter! I love peanut butter!!
Who wouldnt love this peanut butter cup cupcake recipe?!





Cupcake Ingredients:
1 package Duncan Hines Dark fudge
2 tablespoons Dutch process cocoa powder
1/2 cup creamy peanut butter
1-1/3 cups water
1/3 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
1 package REESE’S Peanut Butter Cups Miniatures

Preheat over to 350 degrees. Line 24 cupcakes cups with paper liners sprayed with PAM. Place one Reese's Peanut Butter Cups Miniatures on the bottom of each paper liner.

Then, place the cake mix, cocoa powder, peanut butter, water, vegetable oil, eggs, and vanilla in a large mixing bowl. Blend for 30 seconds on low, then increase speed to medium for 1 minute and 30 seconds.

Spoon batter on top of each miniature peanut butter cup.

Bake the cupcakes until they spring back when lightly pressed with your finger. Check them after 15 minutes.

Frosting Ingredients:
1 stick of butter (room temp)
1/2 cup shortening
4 cups confectioners sugar (sifted)
1 tsp vanilla
8 tbsp milk (may need a little more or less)
3/4 cup cocoa powder
1 cup peanut butter (creamy)

Put all ingredients into a bowl and mix with a hand mixer. Then, decorate your cupcakes!

Cookie Dough Cupcakes

Who doesn't like cookie dough?!
Cookie dough + Cupcakes = AMAZINGG


(makes 24)

Cupcakes:
- 3 Sticks unsalted butter, room temp
- 1 1/2 cups packed light brown sugar
- 4 large eggs
- 2 2/3 cup flour
- 1 tsp salt
- 1 cup of milk
- 2 tsp vanilla
- 1 cup chocolate chips

Filling/truffles:
- 8 TBL unsalted butter, room temp
- 3/4 cup packed light brown sugar
- 2 1/4 cup flour
- 1 14oz can sweetened condensed milk
- 1 tsp vanilla
- 1/2 cup choc chips
- package of chocolate melts

Frosting:
- 3 sticks unsalted butter
- 3/4 cup packed light brown sugar
- 3 1/2 cup confectioners' sugar
- 1 cup flour
- 3/4 tsp salt
- 3 TBL milk
- 2 1/2 tsp vanilla

Filling/truffle directions:
Make this first! Combine butter and sugar and cream until fluffy. Add flour, condensed milk and vanilla. Fold in the chocolate chips.Cover, put in freezer for about 45 minutes.

Cupcake directions:
Preheat over to 350 F. Line cupcake pans. (makes 24). Combine butter and brown sugar about 3 minutes. Mix in eggs, 1 at a time.

Combine the dry ingredients in separate bowl. Add to the butter/sugar mix, alternating with the milk, starting with the dry ingredients and ending with the dry ingredients.

Add vanilla, then fold in chocolate chips.

Add batter to the liners and bake for about 18 minutes.

When finished baking, take out and let cool completely. Once cool, cut a cone shape out of each cupcake and fill whole with a cookie dough ball, and then add the top back to the cupcake.

Frosting:
Mix butter and brown sugar. Add the confectioners' sugar, the the flour. Add the salt, then milk, then vanilla.

You'll need the following ingredients:
Bugles.. yes BUGLES!!
Chrismas colored M&Ms
White almond bark

Dip open end of bugle into melted almond bark.
Top with an M&M.
Put on wax paper to cool.

Enjoy!
